This Layered Bacon and Corn Dip, is me holding onto summer as hard as I can. You can feel fall in the air, the trees are starting to turn a pretty sunset shade. I actually watched a few leaves fall the other day. It sounds all lovely, but I’m not ready! I am holding onto the very last bits of summer, like a baby clutches its soother. Seriously, where did the summer go?

I’m still writing out our summer to do list, whoops. Well, the weather might be gearing up for the second part of the year, but I’m going head first into September with this cold, Layered Bacon and Corn Dip. Before, I eventually have to give up and accept autumn’s return, I’m getting in my last fill of fresh corn.

While we were up in Canada for our summer vacation. We spent a weekend with my parents and their friends at the cabin. We were completely spoiled with the best corn I’ve ever tasted. It was delicious. Their friends are corn farmers just outside Chicago and they gave me a few pointers on how to pick a good cob of corn.

First of all, go straight to the source, they really emphasized this point. Good corn is picked and eaten the same day. So, if you’re fortunate enough to have a farm stand nearby by head there first!

Next they say look for bright green husks, nothing dull or brownish and they shouldn’t be dried out at all. Finally the silk should never be black. Look for silks that are dry and light in colour.

After eating two cobs each, we still had quite a few leftover. So, the next day, while my family was out fishing and the baby was napping. I whipped up this Layered Bacon and Corn Dip. And it was a total hit!

How to make Layered Bacon and Corn Dip

Anytime I use cream cheese, I always try to soften it up a bit before using it. Once the cream cheese has warmed up a bit, mix it with the mayo and sour cream. Toss in the spices and mix until combined.

Then spread this mixture into the bottom of a rimmed plate or small casserole dish. Crumble your bacon and layer this over the cream cheese followed by the corn, diced tomatoes and green onions. Top everything with cheese and serve with tortilla chips.

We served this to a crowd at my parents cabin. Both adults and kids loved it. I always think, it’s a sure-fire sign something is good, when people keep coming back for seconds. With this dip, not only did they come back for seconds, but they’d take a scoop to munch on while they loaded up their plates with other snacks and then another to go, too! A definite summer (almost fall) must-have dip!

Layered Bacon and Corn Dip

Layered Bacon and Corn Dip is a must for the summer months. Fresh leftover corn paired with crispy bacon layered over a cream cheese base and topped with is addictive. Perfect for a crowd and any long weekend gatherings.

INGREDIENTS

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp seasoning salt
  • 1/4 tsp dill weed
  • 1/4 tsp black pepper, fresh ground
  • 1/4 tsp chili powder
  • 1/2 cup bacon, cooked crisp and crumbled
  • 1/2 cup corn, cooked (leftovers work great)
  • 1 tomato, large, diced small
  • 3 tbsp green onion, sliced fine
  • 2 cups cheddar cheese, grated

INSTRUCTIONS

  1. Mix softened cream cheese, sour cream, mayonnaise and spices and spread into a rimmed serving plate or casserole dish.

  2. Crumble cooked bacon and break apart any large clumps of corn. I use leftover corn here. Layer the bacon, corn, then tomatoes and green onions. Finish by topping everything with cheddar cheese.

  3. Keep refrigerated until ready to eat. Serve with tortilla chips.
