Loaded with veggies, this Roasted Vegetable Pita Sandwich is a vegetarian's dream meal. Packed with flavour, it'll satisfy your weekly sandwich craving.
Cut pita bread in half and then gently split each half, creating a pocket.
Spread two tablespoons of hummus inside each pocket, followed by 1/2 cup of the Roasted Mediterannean Vegetables and then sprinkle with 2 tablespoons of feta cheese per side. Season with salt and pepper.
Optional: Wrap in tin foil and heat in a 350 degree oven for ten minutes or until warmed through. Or microwave for about 30 seconds to warm slightly.
