Who needs a really good potato side dish recipe? Now, who needs a two-ingredient mashed potato recipe that will impress everyone? Cream Cheese Mashed Potatoes sounds like a decadent dish you’d find at a restaurant and guess what, you probably could. These mashed potatoes are a dream. They’re full of flavour, creamy and one of the best sides I’ve had in a long time.

Now, I did have to give these a couple of tries before I got them figured out. This recipe only works with red potatoes. Don’t bother trying with anything else, they just won’t work! Boil the potatoes but make sure to save some of that starchy potato water, because you’ll use it to thin out the potatoes and cream cheese. By using the starchy water it helps to create the most perfectly mashed side dish, one that will have everyone asking for this crazy flavourful recipe. Bonus for you it’s only two ingredients!

HOW TO make Cream Cheese Mashed Potatoes

INGREDIENTS

  • 2 lbs. red potatoes (must be red)
  • 7.5 oz chive and onion cream cheese (I use Philadelphia)
  • 2-3 tbsp reserved potato water

You’ll also need water for boiling the potatoes.

INSTRUCTIONS

  1. To start, peel and cut the potatoes into small chunks.
  2. Add them to a medium pot and cover with about one inch of water. Bring to a boil and let boil until potatoes are fork-tender.
  3. Reserve a cup of the hot potato water and drain off the rest.
  4. Heat the cream cheese for about 30 seconds in the microwave.
  5. Start mashing the potatoes using a hand mixer, once the potatoes are broken into small pieces, blend in the cream cheese. Beat the potatoes on medium speed until creamy, adding a tablespoon of reserved potato water until you have the right consistency. You’ll need about 2-3 tablespoons of water.
  6. Serve immediately.

When I set out to make two-ingredient mashed potatoes I wasn’t sure I could really make it happen. Well, I knew I could make it happen, but would it actually taste good. Trust me when I tell you, I nailed these potatoes and they will knock your socks off. I literally stood at the counter spooning extra bites into my mouth before I had to reluctantly dish up dinner. I did NOT want to share. Seriously, I could make a meal out of these potatoes and I bet you could too!
