Creamy Feta Party Dip with Bruschetta Topping
My friend, Gabe, called me a few weeks back, and wanted a bit of advice on a dip she wanted to serve. She was going to serve bruschetta, but her bread always gets soggy, (it happens) so she wanted to flip the script, and change it into a dip. We brainstormed back and forth until we settled on a cream cheese base with tomato bruschetta on top. It didn’t quite translate as well as we imagined. But with a bit more chit chat Creamy Feta Party Dip with Bruschetta Topping was born.
This is my new favourite dip. Seriously, holy geeze, how did I not think of this, before now? We love feta in this house, it’s so addictive, it adds a tangy kick to any dish. I could put it on almost everything. If you haven’t tried it yet, you must! It’s soft, creamy and salty. Once you’ve made this dip, try adding feta to these Roasted Mediterranean Vegetables or a simple greek salad. My husband even likes it mixed into scrambled eggs.
The saltiness from the feta cheese pairs so well with the tomato bruschetta, that rests on top of this dip. It’s a combo made in heaven, the feta needs the balance from the fresh tomatoes to cut the saltiness and the tomatoes need that bit of salt to bring out their maximum flavour. It’s amazing! Every bite is fresh, yet tangy, it’s smooth and creamy but there’s still a nice texture from the bruschetta. It’s a total party in your mouth.
I wanted this dip to be smooth, extra smooth, in fact, so, I kept adding more yogurt and then a bit of mayonnaise. And man, is it creamy, as in, pillowy soft and smooth. The dip scoops up like a dream, but it still holds its shape. And then add the tomato bruschetta topping and you’ve got yourself pure dip perfection.
How to make Creamy Feta Party Dip with Bruschetta Topping
I made this in my high powered blender, but a food processor would work just as well, if not better. To get started, add all the feta ingredients and mix it all until it’s smooth. Scrape down the sides a few times, to make sure everything is blended in well. Spread the creamy dip onto a small platter, cover and then refrigerate until you’re ready to serve this.
Once you have the feta base ready, start on the bruschetta topping. Dice your tomatoes and onion small, mince your garlic and chiffonade the basil and then mix all that together with olive oil, balsamic vinegar and a pinch of salt. Let this sit and marry for at least 30 minutes or more.
Right before serving this dip, drain the bruschetta. I didn’t drain this, the first time I made it. I ended up with a lot of extra liquid from the bruschetta and it turned the feta into a bit of a soupy mess. So, just avoid that and drain your bruschetta. After draining the tomato mixture, spoon the fresh bruschetta over the feta base. You could garnish with a bit of feta crumbles and reduced balsamic, but it’s not necessary. Serve this with pita chips, baguette slices or crackers.
This Creamy Feta Party Dip with Bruschetta Topping is totally addictive. One bite and you’ll be back for seconds. It’s salty and fresh all at the same time. Besides tasting amazing, it’s a showstopper on the snack table!
