Easy Refried Beans (Two Ingredients)

Shocked. Stunned. Surprised that a can of pinto beans and a little seasoning is all it takes for Easy Refried Beans. And they're delicious! I've never been a fan of refried beans but this version is the best I've tried and I would gladly trade in the meat for this tasty vegetarian version!

I was chatting with my best friend one night and happened to ask what they were having for dinner. She said tostadas, I asked a few more questions. And found out that her son only liked his tostadas with Easy Refried Beans. I didn’t believe her. I mean, I don’t know any kid that would choose beans over taco meat. Personally, beans have never been my go-to. Usually, I just leave them on my plate or push them around until the waiter finally comes and takes it all away. Make them at home? No way, so not my thing.

I kept that recipe in my back pocket waiting until I had worked up the courage to eat beans. Well, today was that day. I poured all the beans into my favourite little pot and hoped for the best. Seriously, I am NOT mad at that kid at all, these refried beans are the best I’ve ever had. I couldn’t stop eating them. So, I made everyone a Tostado and then made myself two and devoured them all along with an extra spoonful of beans. I would have zero problems subbing out taco meat for these beans. #meatlessmondays here we come!

How to make Easy Refried Beans

Ingredients

Instructions

  1. Pour the undrained beans into a small pot. DO NOT rinse or drain.
  2. Stir in the garlic salt and simmer on medium heat until the liquid starts to evaporate about 30 minutes. Stir frequently as the beans can stick to the pot as the liquid evaporates.
  3. Mash the beans in the pot until you reach your favourite texture. Serve immediately.

My friend swears these are the best refried beans around and she knows her Mexican foods. Also, the beans must be Goya, other brands don’t turn out as good, according to her. Since I’m fairly new to the refried bean craze (is that a thing), I’ll take her word for it. I can say from personal experience and from someone who has never been a fan, these beans are truly delicious. A definite must-make!
