Inside I cringe a little when this happens. But with nachos, everyone gets a generous portion, including me. If you like gooey melty cheese pulls, tasty beef, fresh tomatoes, black beans, corn and a bit of spice, then this dish is for you. What isn’t there to love? I don’t know anyone who doesn’t grin wildly at the sight of that huge platter. It’s a giant party dish that pleases all! One of my favourite restaurants back home doesn’t even list what is on their nachos, just calls them famous and my version of this shareable recipe is a riff on theirs, and you guys are going to love it!

First of all, these nachos are loaded to the max. We’re talking layers of tortilla chips smothered in lots of taco flavoured beef, black beans, corn, fresh tomatoes and green onions. Add a sprinkling of black olives and jalapenos and then blanket it with gooey, melted Colby jack cheese.

How to make Loaded Mile-High Beef Nachos

Start by frying the ground beef with a bit of taco seasoning. While that’s browning, dice the tomatoes and slice the green onions, rinse the beans and corn. And then grab yourself a nice big pizza stone or a large rimmed baking sheet and cover it with a sheet of parchment paper.

Now it’s time to layer! Start with a small layer of tortilla chips, a few tablespoons of the ground beef, a spoonful of each the beans, corn, tomatoes and green onions. Add a few olives and jalapeno slices. Then a good sprinkle of the Colby jack cheese. Continue layering the nachos, tortilla chips, ground beef, toppings, and cheese until you reach the top. Bake everything for about 7-10 minutes. Top with sour cream, salsa and guac.

Now, this fun mile-high plateful of deliciousness is great as a party appetizer, but it can totally feed a family for dinner, likely with leftovers, too. It’s a lot of food! Everyone in our house adores these. I pull this recipe out for special occasions and sometimes just ’cause it’s Friday and it’s been a long week. They’re flavourful and fun and we all sit around pulling loaded chips from the pile, trying to see whose cheese pull is the longest. For me, though, these nachos are all about togetherness and right now that’s just what the world needs!

Loaded Mile-High Beef Nachos

Just like the restaurants, loaded seven layers high with taco beef, tomatoes, green onions, black beans, corn and layers of gooey cheese. These easy Loaded Mile-High Beef Nachos are a fun, shareable appetizer or meal.

INGREDIENTS

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 10 oz bag yellow restaurant-style corn tortilla chips
  • 3/4 cup canned black beans, rinsed
  • 3/4 cup canned corn kernels, rinsed
  • 6 green onions,, tops only, sliced
  • 5 roma tomatoes, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup pickled jalapenos
  • 2 cups monterey jack cheese, grated
  • 1/2 cup guacamole
  • 1/2 cup sour cream
  • 1/2 cup salsa, optional

INSTRUCTIONS

  1. Preheat oven to 400 degree F. Prepare a large round pizza stone or large baking sheet by covering with a sheet of parchment paper and set aside.

  2. Brown ground beef until cooked through, drain off excess grease. Add in taco seasoning and mix until combined. Set aside.

  3. On the stone, spread out a layer of tortilla chips, top with two tablespoons of the taco beef mixture, top that with a couple tablespoons of each tomato, green onion, black beans, corn and then a few black olives and about a 1/4 cup of grated cheese.

  4. Repeat the following steps until you have about 6 or seven layers: Top with a layer of tortilla chips and split the remaining beef, black beans, corn, tomatoes and green onions. As well as the olives and jalapenos, and 1/4 cup of cheese, on every layer. Finish with the remianing grated cheese.

  5. Bake for 10 minutes or until the cheese is melted. Serve with guacamole, sour cream and salsa.
