Festive Cranberry, Bacon & Almond Pinwheels
Need a quick and easy appetizer for the holidays? Something you can throw together in minutes and will be one of the first to go? I’ve got you covered. Festive Cranberry, Bacon & Almond Pinwheels are packed full of flavours. The sweetness from the cranberry with the savoury bacon and the crunch of the almonds is such a delightful appetizer. Add in a bit of tangy feta cheese and green onions and you’ve got a snack that won’t last long.
Do you ever offer someone a piece of something and they don’t take it right away? In fact, they tell you they’ll try it later and you’re left struggling with yourself on how to possibly save an extra bite. Because it’s just so good, you know there’s no possible way this is going to last.
This happens to my husband on the regular in our house. He always replies with a “sure, I’ll try it, but in a little while”. I’ve decided if you don’t try it now, it’s your own fault if there’s none left. These particular pinwheels did not last long in our home. Elan, our youngest would start dancing the minute the Tupperware container came out of the fridge.
There were two pieces left from the last batch we made and finally, my husband came looking for a bite. Of course, he loved it and then asked for more. I laughed cause this is so typical in our home. So, I’ll be making another batch in the next few days! If you’re going to give these a try, I suggest you just double the batch now!
How to make Festive Cranberry, Bacon & Almond Pinwheels
Take out the cream cheese ahead of time so it has time to soften. If you forgot or you’re short on time. Take the cream cheese out of the cardboard, but leave it in the tin foil packaging and place it in a bowl of hot water and it’ll soften quickly. This is my favourite go-to trick when I haven’t been as prepared as I should’ve been.
Next, toast the almonds until they are fragrant and golden brown. I bake the almonds in a preheated 400 degrees F oven for about seven minutes, but keep an eye on these in case your oven is warmer than mine. Take the almonds out and let them cool before stirring them into the filling. When the almonds have cooled, mix them with the cream cheese, bacon, cranberry, feta cheese, garlic, green onions and black pepper. Mix this around until everything is well combined.
Spread out three flour tortillas and place a third of the cream cheese mixture on each. Spread this out with a butter knife. Roll each tortilla up tightly and wrap in plastic wrap and refrigerate for at least an hour. Once chilled, using a sharp knife, cut the ends off. I like to snack on these, consider it the perks of making pinwheels. Then cut each rolled tortilla into 8 equal sections. Serve immediately or refrigerate until it’s time to set these out.
I try to make sure to offer these to everyone, they’re great to pass around at a get-together. They’re the perfect finger food and such a great, tasty bite. And take it from my husband, you don’t want to be late to the party on this one! They’re a new favourite in this house!
