Homemade Greek Seasoning & Mediterranean Roasted Vegetables
I am a huge fan of greek food. I want it all, souvlaki, pita bread, lemon potatoes, dolmades, and feta cheese. Oh and spanakopita, I could live on that flaky cheese pie, alone. Don’t even get me started on the desserts. Let’s just say, it’s one of the most flavour-packed types of cuisine out there. Years ago, I bought a greek dressing mix from Epicure and I used it on everything. Then I ran out, had to come up with my own Homemade Greek Seasoning and I’d put my seasoning up against Epicure’s any day!
It hits all the right notes. When I first started trying to come up with my own version, I enlisted the help of my cousin’s wife, as in, I ran my list of questionable ingredients by her. Her family is from Cyprus and the wedding was all things Greek. It was amazing. So much delicious food, and the dancing. I wish they could do it again every year! It is the one party I wouldn’t miss.
So, with her approval of cinnamon and nutmeg, I started experimenting. It didn’t take me long to settle on this version and it is good, like let me put this stuff on everything! Especially Mediterranean Roasted Vegetables.
How to use Homemade Greek Seasoning
- rub on chicken before baking or grilling
- coat potatoes with a bit of oil and seasoning before roasting
- make a quick vinaigrette with olive oil, red wine vinegar and the seasoning for salads
- mix it with a bit of greek yogurt and use as a marinade for meat
- mix it with sour cream for a quick dip
- brush pita bread triangles with oil and sprinkle with seasoning before baking crisp and serving with tzatziki sauce

I make Mediterranean Roasted Vegetables about once every two weeks. It’s my favourite way to get extra veggies in and it’s so, so good! A mixture of peppers, onions, tomatoes, zucchini, and mushrooms marinate in Homemade Greek Seasoning, obviously! There are a few other ingredients in there, but the spices are the real winner! I like to let the veggies marinate overnight to bring out the maximum flavour.
How to make Mediterranean Roasted Vegetables
This is another super easy recipe. Mix together a bit of olive oil, balsamic vinegar, fresh lemon juice and a couple of teaspoons of the Homemade Greek Seasoning. In a zip-top bag, add the marinade and vegetables, give it a few flips to really coat everything and marinate overnight. Roast in an oven until slightly charred. This is how I like my roasted vegetables, but if you prefer them not so roasted, just adjust the time in the oven. Be careful when you open the oven door, there is always a ton of steam. Now, if you really want to kick this up a notch, skewer the vegetables and grill them on your barbecue. Delish!
I’m positive this will become a favourite way to incorporate extra vegetables into your diet and we all know that’s important. But besides being good for you, these veggies are so flavourful. They are a wonderful side to any meal or addition to a sandwich for a hearty vegetarian meal. Either way, these roasted vegetables will be the perfect addition to your weekly menu!

Homemade Greek Seasoning & Mediterranean Roasted Vegetables

INGREDIENTS
Homemade Greek Seasoning
- 2 tsp coarse sea salt
- 2 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp pepper
- 1/2 tsp marjoram
- 1/2 tsp thyme
- 1/2 tsp rosemary
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
Mediterranean Roasted Vegetables
- 8 oz button mushrooms
- 1 pint cherry tomatoes
- 3 peppers (red, green, yellow)
- 1 zucchini
- 2 red onions
- 1/4 cup olive oil
- 2 tsp Homemade Greek Seasoning
- 2 tbsp balsamic vinegar
- 1 lemon, juiced
- salt & pepper, to taste
INSTRUCTIONS
Homemade Greek Seasoning

Mix all the ingredients together. Store in an airtight container.
Mediterranean Roasted Vegetables

Prepare the vegetables by cutting the mushrooms in half, the peppers in 1" chunks, the zucchini in 1/2" rounds or smaller, the red onions in wedges and leave the tomatoes whole. Add all the cut vegetables into a large zip-top bag.

Add the rest of the ingredients to the zip-top bag and rotate to coat all the vegetables. Leave this to marinate overnight for maximum flavour.

Preheat oven to 400 degrees F.

Line a large baking pan with parchment paper or use a stoneware pan and lay the vegetables out flat and cook for 45 minutes. Be very careful when you open the oven as there will be lots of steam.

Delicious! I added black olives too. Will reduce salt next time as I crumbled quite a lot of feta over and as salty I didn’t need so much salt in the marinade. Everyone enjoyed it, a completely clean dish!

If out of marjoram and nutmeg, what’s best substitute? (Will leaving these out adversely affect the outcome?)

It won’t be quite the same, of course, but if I didn’t have both on hand I’d just leave them out. Nutmeg could be substituted with mace in a pinch, though.

I need you to know that this is hands-down the absolute best recipe I’ve found on the internet. (And believe me when I say I scour the internet for recipes a lot!) I originally found it when doing a Whole30 a couple years ago, but have used it many times since, W30 or not. I generally pair it with a Greek cauli-rice and protein of chicken or pork. So delicious!
