Lemon Garlic Pasta with Parmesan
This pasta is perfection! With just a few simple ingredients regular old spaghetti transforms into heaven on a plate. Seriously, it’s to die for! Yes, I know that sounds a little over the top, but give this a try and tell me I’m wrong. I bet you won’t. It’s an easy side dish, lunch dish, main dish. Heck, I’d eat this Lemon Garlic Pasta with Parmesan for breakfast, if there was ever any leftovers, it’s a real problem. If you like leftover pasta, and really who doesn’t, go ahead and double the recipe now.
Ok, let’s talk pasta for a minute. I love spaghetti, not spaghettini, not angel hair. I like a nice thick noodle. Spaghetti is my jam. I have yet to find a pasta dish, I like more than spaghetti. I will keep experimenting and testing new noodles, but for now, the humble spaghetti noodle takes the cake for me. It’s so versatile and it’s the perfect pasta to pair with any kind of sauce. Ok, I’m not a pasta expert, so don’t quote me on that. But in my opinion, spaghetti is best!
Now, that we covered the spaghetti, let’s talk about the sauce! This Lemon Garlic butter sauce with Parmesan is serious. Seriously good! The lemon garlic butter gently coats the hot spaghetti. The parmesan just hits it with that slightly nutty flavour and then the crunch from the almonds, really every bite just gets better and better. I add spinach, literally because it’s healthy, and I feel a lot less guilty about finishing off the entire pot, with spinach in the mix. Yes, you read that right, an entire pot has disappeared, once or twice, it happens.
How to make Lemon Garlic Pasta with Parmesan
Boil the pasta. A couple of minutes before the pasta is done, start melting the butter. Once the butter is melted, stir in the garlic and spinach and let that cook until the spinach is slightly wilted. now using tongs or a fork, pull the hot spaghetti and toss it into the pan. Add the parmesan, the pasta water and combine. Then, hit it with the lemon! and give it a quick toss to coat everything. Sprinkle with the roasted almonds and finish with a dash of salt and pepper.
That’s it! This pasta is by far one of the easiest dishes I make. It was my single-girl staple before I met my husband, and now, well, if I’m being honest, it’s still my go-to if my husband is out for dinner but that’s really because I don’t want to share. This dish also makes the perfect side for roasted chicken or shrimp with a nice green salad on the side.

Lemon Garlic Pasta with Parmesan
A simple Lemon Garlic Pasta that comes together about as fast as it takes to boil the spaghetti! Don’t be fooled by how easy this recipe is, the flavour is beyond indulgent and will impress even the toughest critic. Garlic and lemon and parmesan meld together in a perfect sauce to pair with hot spaghetti, spinach and roasted almonds. A perfect side or main dish if you’re looking for a meatless Monday meal!
INGREDIENTS
- 8 oz spaghetti noodles
- 1/4 cup reserved pasta water
- 3 tbsp butter
- 2 garlic cloves, minced
- 1 cup spinach, sliced fine
- 1 cup parmesan
- 1 lemon, juiced
- 1/4 cup almonds, roasted
- 1 tsp sea salt
- pepper to taste
INSTRUCTIONS

Boil the spaghetti according to package directions. Drain and reserve 1/4 cup of the pasta water.

A couple minutes before the spaghetti is finished cooking, start melting the butter in a medium pan over medium heat.

Once the butter is melted, add garlic and let cook until just fragrant about a minute. Stir in spinach and let wilt.

Add the cooked spaghetti and mix together. Sprinkle with parmesan and salt and pour in the reserved water.

To finish, stir in the almonds and juice the lemon over the pasta. Serve hot.
