I go through spurts and starts with the Food Network. There will be weeks where I binge-watch as much food-related tv as I can stand and then nothing for months. I went through one of those bouts a few months back. It was a competition show where on one single episode two of the contestants both made a version of egg in a hole and I knew I needed to share my favourite recipe for Loaded Egg in a Hole.
So, there are a few names for this out in the world, toad in a hole, egg in a basket, hole in one, and egg in a frame along with a few others. Basically they’re all describing a breakfast where an egg gets cracked into a hole made in a slice of bread and then everything gets fried at the same time and is delicious. Think grilled cheese bread but with an egg. There’s lots of variations out there. Add-ins include bacon, ham, cheese, avocado, spinach, tomatoes, really anything goes!
Loaded Egg in a Hole is one of my favourite recipes for this almost handheld breakfast. I’m not sure why, but sometimes this stays perfectly intact and then other times it’s a little messier than usual. But either way, it never disappoints on flavour. It’s so good! I personally like the sausage, onion and peppers combo with the egg, it feels like a giant Sunday breakfast all in one bite.
Now I think the thing I like the best about this dish is that it’s totally versatile, you can mix in whatever your favourites are and really personalize this to your own tastes! One thing I wouldn’t skip is the cheesy crust. It’s over the top! Crunchy cheese fried right onto the bread, um totally a must! Hungry yet?
How to make Loaded Egg in a Hole
Fry up the breakfast sausage, I used patties and just broke them apart, but whichever you like best that you can crumble should work! Once it’s broken apart and cooked through, add in the onions and peppers and cook on low until they’re both soft. Set this aside.
Cut the bread into nice thick slices, an inch is a perfect size. You want to load up the hole with both the sausage and pepper mixture and a full egg, so you’re looking for a good solid slice of bread. I used English muffin bread, but honestly, any uncut loaf would work for this. A Rye bread would be tasty as well as a sourdough! Butter both sides and then cut out a circle using a biscuit cutter. No biscuit cutter? No problem! A knife works just as well, but maybe not as pretty. This breakfast is pretty rustic though, so perfection is not important at all!
Now, in a pan over medium-low heat add the cut bread slice and spoon in a bit of the sausage mixture, top that with an egg and let it cook for a few minutes. Carefully flip this over and fry the second side until the egg is cooked through. Sprinkle on a bit of cheese and then flip it over again. This creates a cheesy crust and it’s so good. You can skip this step, but I wouldn’t if I were you.
This hearty breakfast is such a fun way to get a full breakfast in. Loaded with flavour, this handheld bite is a favourite in our house. Sausage, onions and peppers along with an egg sit in the middle of deliciously pan-fried bread that gets buttery and crisp and then a sprinkling of cheese creates a crust that sends this dish right over the edge. Loaded Egg in a Hole
Also called hole in one and toad in a hole, whatever you call it, this version is extra tasty. Loaded with sausage, peppers and onions and then nestled in a thick slice of bread. Crack an egg over top of the sausage mixture and then finish it off with lots of melty colby jack. A breakfast of champs!
INGREDIENTS
- 1 loaf English muffin bread, uncut (any uncut loaf should work, except for baguettes)
- 6 eggs, large
- 6 oz Pork breakfast sausage
- 1/2 cup onion, diced
- 1/2 cup green or red peppers, diced
- 2 cups colby jack cheese, shredded
- 4 tbsp butter
INSTRUCTIONS

In a medium pan over medium heat, fry the sausage, crumbling it as it cooks. When that's cooked through, add in the onions and pepper and cook until they're soft.

White the sausage is cooking, cut six 1 inch thick slices from the loaf of bread. Butter both sides and then using a biscuit cutter, cut a circle from the centre of each slice of bread. Keep the holes and fry those along with the egg in a holes.

In another pan, over medium-low heat place a slice of bread, add two tablespoons of the sausage, onion and pepper mixture, spread this around inside the hole and then crack in one egg. Repeat for all six slices.

Let this cook for about 4-6 minutes on one side, then gently flip it over and cook for an additiional 4-6 minutes.

Next, sprinkle a little bit of cheese on one side and once it starts to melt, flip it over so that it forms a crispy cheese crust. On the second side, sprinkle a bit of cheese again and once it melts flip it over and let that side crisp up as well.

Serve immediately.
