Pesto Chicken and Tomato Basil Sliders
You guys, I have never been a chicken salad fan. I know, who doesn’t like chicken salad? Well, that would be me. There’s just something about this mixture that is not my cup of tea. But, these Pesto Chicken and Basil Tomato Sliders might have just converted me. They start with a chicken salad base with a good helping of pesto, get a burst of flavour in a tomato and basil mixture, extra cheese, of course, and wow are they delicious! My little family demolished these mini sandwiches. They are so so good! I feel like pesto is one of those universal…

Caesar Salad with Mushrooms and Crispy Breadcrumbs
When I'm at a restaurant, I generally choose the caesar when offered a side. Of the three usual options, caesar is my go-to. It's not as filling as the soup and the side salad is, well, boring. Now, a good caesar salad in my opinion has to have fresh crunchy greens, a garlicky dressing, bacon and loads of parmesan, Caesar Salad with Mushrooms and Crispy Breadcrumbs takes my favourite salad, one step further. The addition of fresh mushrooms is incredible. I also like to top the whole thing with crispy salt and pepper breadcrumbs for extra crunch in every bite.

Kid’s Favourite Shirley Temple Popsicles
The weather the past few weeks has been hot, blistering hot, in fact. The weather reporter keeps calling it oppressively hot. It sounds like we live in a dusty town, that hasn't seen water in years. We don't, I assure you, but when they say hot, down here in the South, it's not just hot, it's humid and gross. But, that means it's the perfect time to make popsicles. My Kid's Favourite Shirley Temple Popsicles are just what this weather calls for. A cold sweet treat to counter all this heat.

Seven ingredients, minimal work and about 10 minutes to let everything marry together, is all it takes. Follow along, so you can learn How to Make Fresh Tomato Bruschetta, too.

Surprise Turtle Cheesecake
Surprise Turtle Cheesecake may look like it's just a lovely chocolate cheesecake, but don't be fooled. Inside there's a thick layer of caramel and a healthy sprinkling of pecans. A little surprise if you will. This cheesecake is a favourite with anyone who tries it. The hidden layer pushes this version of turtle cheesecake to the very top of the cheesecake pyramid.

Brown Butter Rice Krispie Squares with Rosemary
Do you take inspiration from one recipe for another? That's what happened here with these Brown Butter Rice Krispie Squares with Rosemary. For our wedding favours, we made these amazing Rosemary Butter Cookies. And ever since then, I've been looking for other ways to incorporate rosemary into almost everything. I love the combination of rosemary with desserts. It creates a perfect balance of sweet and savoury, so, obviously, I have to jazz up Rice Krispie Treats with it!

Roasted Vegetable Pita Sandwiches
Roasted Vegetable Pita Sandwiches are my favourite vegetarian sandwich. I'm not vegetarian. I tried once, but bacon brought me back, true story. This sandwich though, if I had to choose only one sandwich for the rest of my life, it would be this one. It's so good. It's bright and packed with flavours. The roasted veggies are marinated overnight to pack maximum flavour and do they ever! It's one heck of a bite. Soft pita bread is loaded full of creamy hummus, Mediterranean roasted vegetables and topped off with salty feta.

Grandma’s Oatmeal Coconut Lace Cookies
This is my Grandma's recipe for oatmeal cookies. Now, you might call these lace oatmeal cookies, or crispy oatmeal cookies or maybe something completely different but my Grandma only called them oatmeal cookies. A simple name for a simple recipe. I, however, call them amazing, addictive and with the addition of coconut, Grandma's Oatmeal Coconut Lace Cookies.

Hometown Favourite Wedges and Dip
There's a restaurant, in my hometown, that makes the best potato wedges and dip. Hands down, you will not find a better house dip, and the crispy fried potatoes are to die for! Every time I go home, in the summer, I have to stop here. Years ago, I got my hands on the list of ingredients for both of these, and with a little experimenting, I can now have Hometown Favourite Wedges and Dip in the comforts of my own home.
