These Hopscotch Cookies remind me of spring, I can remember the sun beaming through the windows, as my mom would scoop off a spoonful of the gooey peanut mixture onto wax paper to harden. Kicked Up Avocado Toast is a quick guacamole piled high on tangy sourdough topped with a couple fried eggs and it all comes together quickly and the flavors are unreal. The richness from the butter on the fried eggs cuts through the hint of citrus in the fresh guacamole and will knock your socks off.
