Rich and decadent, this Honey Butter will take your breakfasts to a whole new level. This sweet condiment will replace all others. No more peanut butter, no more jams, forget the syrups. This sweet butter will hit a home run. It’s smooth and buttery and perfectly honeyed. I’ve been enjoying it all week on my toast, but really the possibilities are endless.

You could serve Honey Butter with slices of bread, muffins, croissants. On pancakes and waffles. I’ve been tempted to top ice cream with it, I’ve refrained, to this point, only because I think it’ll become a really hard habit to break. I do suggest dipping graham crackers in it, though, yum! Seriously, anything you put butter on, I’d try this as a sweet replacement.

Our family serves this with our Family Irish Bread, I’ve tried it on bran muffins and I think it would be fantastic on banana or pumpkin bread. I also think dunking pretzel bites in this would be a great treat!

My aunt has suggested some variations. Adding in lemon or orange zest, she says is delicious. She also thinks cinnamon would be a fantastic addition, I agree. I’m on a rosemary kick, so I think, some fresh rosemary would knock this out of the park. I’d split the recipe in half after it’s made and keep one as the original version and then jazz up the other half!

It’s simple! cut the butter into small cubes and place right into your high-powered blender, so it’s ready to go. Then, mix together the sugar, honey and cream in a large saucepan. Bring these to a boil and let them boil for one minute, BUT, keep an eye on this. When I made this, my son called for me and I walked into the living room for a few seconds and came back to a boiled-over mess. It took me an hour to clean the stovetop of all the sugary burns. Do as I say, NOT as I do!

Once the mixture boils for a minute, immediately pour this over the cubed butter in the blender and blend until completely smooth. Pour into jars and let cool. Store in the fridge or freezer. I have one jar in the fridge and one in the freezer.

INGREDIENTS

  • 1 lb butter
  • 1 cup sugar
  • 1 cup honey
  • 1 cup heavy whipping cream

INSTRUCTIONS

  1. Cut butter into small cubes and place in a high-powered blender.

  2. Bring to a boil sugar, honey and heavy whipping cream. Let boil for one minute. Remove from heat immediately and pour into blender. Blend until smooth, pour into container.

  3. Store in fridge or freezer.
