I bet you’re thinking a whole post on pickled onions, really, Tanya? Oh yes, watch this happen! Quick Pickled Red Onions are a topping fit for a king. They are quick, easy and delicious. The mellow zip adds such a lovely flavour to anything they’re added to. Use them to add a light crunch to sandwiches and salads. Nevertheless, whatever you choose to add them to, you won’t be disappointed.

I first fell in love with pickled red onions at Panera Bread. They make this amazing steak and arugula sandwich that literally makes my tastebuds dance. One taste and I was in love. I wanted more of everything especially the onions. The pickling takes the harsh bite out of the red onions but leaves behind this light zing that only adds oomph to any dish it’s added to. Think tacos, burgers, pizzas, omelettes, seriously the list goes on and on.

How does this amazing condiment happen, you ask? It’s not a hard task to take on, at all. In fact, you probably have all the ingredients on hand. Vinegar, red onion, salt, sugar, peppercorns and a bay leaf, that’s it and the finished product is so versatile.

So, I set out on Pinterest to find the perfect recipe for these bad boys. Checked out a few different recipes, ultimately landing on this recipe at Budget Bytes. I had everything in my pantry and a few kid-free minutes. So I whipped up a batched. I changed the recipe slightly, more peppercorns, less sugar and salt. It’s amazing! Since making these Quick Pickled Red Onions yesterday, I’ve already used them in a salad and a grilled cheese sandwich. My son, Ben, he’s been eating them straight out of the jar. If my super picky two year old is a fan, I’d say they’re a hit.

INGREDIENTS

  • 1 medium red onion, sliced
  • 1 cup white vinegar
  • 1 tbsp salt
  • 2 tbsp sugar
  • 1 tsp peppercorns
  • 1 bay leaf

INSTRUCTIONS

  1. In a small pot, stir together all ingredients. Cover and bring to a boil. Let mixture boil for two minutes and remove from heat. Pour into a glass bowl and let cool to room temperature. Store in a glass mason jar.
