Spanakopita Inspired Grilled Cheese
Creamy cheeses are mixed with fresh spinach and dill and then sandwiched between two golden fried slices of brioche bread in this spanakopita inspired grilled cheese. It’s easy and gourmet all at the same time.
I have been thinking about this grilled cheese for months. A fan of spanakopita (greek pie) for years, I remember sitting in my auntie Cath’s kitchen, assembly-line style, making those delicious phyllo packets. She sent me her greek pie recipe last year and I’ve been putting it off.
Despite having made these before, the recipe is written in cryptic code and I’m a little intimidated to try it. It’s an add-a-bit-of-this-and-some-of-that type recipe and frankly, it makes me nervous. Spanakopita is a classic, hence my trepidation. They’re so good, it would be a crime to mess these up.
With that recipe safely tucked away, I’ve turned my focus to finding a way to incorporate these flavours into an easier recipe. Something I can confidently tackle. Enter grilled cheese sandwiches! Yes, you read that right.
Grilled cheese sandwiches are the perfect vehicle for so many flavours and I’m a huge fan. I find grilled cheese can cover so many bases. Quick and easy to gourmet, even savoury to sweet. Check out my Maple, Bacon, Apple and Cheddar Grilled French Toast Sandwich for a breakfast version.
I made a steak salad for lunch today and threw the leftover meat into a grilled cheese, for dinner this evening, with some pickled onions, tomatoes and mozzarella. They’re so versatile.
How to make your own Spanakopita Inspired Grilled Cheese
Start by mixing mozzarella, a bit of goat cheese and feta with fresh dill and spinach and spread that mixture between two soft, pillowy slices of brioche bread. Then, fry ’til golden and enjoy. This Spanakopita Inspired Grilled Cheese sandwich is totally reminiscent of its inspiration.
Let me assure you, this sandwich is exactly what I was looking for. Not only does it have that salty bite greek pie often has, but it’s creamy and cheesy. This grilled cheese barely made it long enough for me to photograph, it’s seriously grilled cheese heaven. Since then, I have quickly added it to my grilled cheese rotation and I’m sure you’ll add it to yours, when you give it a try.

Spanakopita Inspired Grilled Cheese
A delicious grilled cheese reminiscent of spanakopita (Greek pie). Filled with feta, goat cheese and fresh dill.
INGREDIENTS
- 4 slices Bread I used brioche
- 3 tbsp butter divided
- 1 cup fresh spinach chopped
- 3/4 cup mozzarella grated
- 2 oz. goat cheese
- 1/4 cup feta cheese
- 1 tsp fresh dill
- pepper to taste
INSTRUCTIONS

Butter one side of each slice of bread and set aside.

In a small pan, melt one tbsp of butter and sauté spinach until wilted.

Stir together cheeses and dill. Add in warm spinach and mix until fully combined.

Place two slices of bread butter side down in a pan. Top with half the cheese mixture and then top with remaining slices of bread butter side up.

Cook over low-medium heat until bread is toasted and cheese is melted.
