Summer Rhubarb Slush
Summer Rhubarb Slush is the drink you need while basking in the sun or lounging by the lake. It’s a baseball game thirst quencher and a backyard barbecue bevy. This slush is the perfect blend for rocking on the porch with a light breeze blowing through your hair. It’s a quick sip while swinging in a hammock. And a toast to good friends around a picnic table. Basically, it’s the mascot for perfect summer days.
Speaking of perfect summer days, one of my best friends and I lived half a block away from each other for a whole summer. It was fun and probably one of the most memorable. We’d meet up on Saturdays for breakfast, the Mariner’s Special, two eggs scrambled with ham and cheese. Then, we’d head over to the farmer’s market to do a little shopping and then finish the afternoon off with a bit of lounging by the lake.
There was one Friday afternoon, in the early summer, when she walked over with a pitcher of this Summer Rhubarb Slush. We topped it up with gin, and this became our summer drink, or at least until we ran out of rhubarb. Then we just added Gin to everything, until we decided to get healthy and turned to Atkins.
I was in the grocery store the other day and the produce section had a bunch of rhubarb. I immediately thought about that summer and this slush. So, I bought as much of it as I could. If you have a rhubarb plant, lucky you, harvest it. Harvest it especially for this drink! For the rest of us, grab a bunch of stalks and get ready for your new favourite summer drink.
How to make Summer Rhubarb Slush
It’s easy, just chop seven cups of rhubarb and boil it in a large pot with water, sugar and lemon juice for about 20 minutes. Drain the mixture through a mesh strainer and using the back of a spoon try and press as much of the juice out as possible. Discard the leftover pulp, or save it for another recipe. Then add the juice to the pot again and bring it back up to a boil, add in the jello and stir until it’s dissolved.
Now freeze the juice. I used an ice cream pail I had laying around, but anything with a lid should work just fine. Put this in the freezer and stir it occasionally until it’s nice and frozen. To make the alcoholic version of this slush, scoop out two big scoops of the mix, add a shot or two of gin or vodka then fill the rest with ginger ale, sprite or 7-up, whichever is your preference. If you prefer the virgin version, just omit the booze.
Once you’ve tried Summer Rhubarb Slush, you’ll understand what I mean when I say this drink is summer’s mascot. It’s refreshing and sweet but slightly tart. It’ll become the drink you bring to every outdoor summer event. It truly is summer in a glass!

Summer Rhubarb Slush
Summer Rhubarb Slush is the perfect summer drink. It will quench your thirst and satisfy your tastebuds. Tart rhubarb is mellowed out with a bit of sugar and raspberry jello. Up the ante and add a shot of gin or vodka.
INGREDIENTS
- 7 cups rhubarb about 16 stalks
- 9 cups water
- 2 cups sugar
- 1/2 cup fresh lemon juice about 2 whole lemons
- 1-6 oz box raspberry jello
- Ginger Ale, Sprite or 7-Up to fill glass
- Gin or Vodka as desired
INSTRUCTIONS

Chop rhubarb into small chunks. Place in a large pot, add water, sugar and lemon and bring to a boil. Boil for 20 minutes.

Strain pulp through a mesh colander and save the liquid. Discard the pulp. Add the liquid back to the rinsed pot and bring back to a boil and add the jello powder. Stir until dissolved. Remove from heat.

Pour into an ice cream pail and freeze, stirring occasionally until slush has formed.

To serve, add a scoop or two of the slush to a glass and fill the rest with Sprite or 7-Up. Add a shot of gin or vodka if you desire.

I haven’t made this but will with the last of my rhubarb but I wanted to add a note about the solids that are left after squeezing – blend them up (add cream if you want) and put into popsicle molds. I do this with all my squeezings! Adding a drop of vodka helps them not be too icy if you’re not making for kids.

My friend gave me about a gallon of juice. I’d like to try this recipe, but I’m not sure how much juice I would need, or how much sugar to add. Any suggestions?

Hi Cindy! My gut says your friend probably boiled it with water and maybe some sugar already? Depending on how much sugar she added, I think starting with nine cups of juice and one cup of sugar is a good guess. Then add more sugar to sweeten it if need be. I hope you like it!
