Has anyone else been feeling a little lost with the state of the world right now? We've been very fortunate and really have zero reasons to complain, but I find myself in a total funk and I just can't shake it. I haven't had any desire to cook or blog and I've put on way too many pandemic pounds! BUT this past weekend was great and it started with Tater Tot and Bacon Breakfast Quesadillas. Nothing special happened but it just felt like we turned a corner!

Apple, Ham and Cheese Breakfast Casserole
I adore a good breakfast dish. Especially one that I can make the night before. One of my favourites is my cousin Chandra's Land of Nod Cinnamon Buns. If you haven't tried that one, add it to your must-try list, but right above that, pencil in this Apple, Ham and Cheese Breakfast Casserole. It's just as good and the total package. This one will fill you up until lunch. It's savoury with just a hint of sweetness from the apples.

Any Season Fruit Salad with Ginger Lime Dressing
This is my new favourite. A last minute, throw together fruit salad. It's easy, delicious and you probably have everything already on hand. I don't tend to pay a ton of attention to what's in season. I'll add that to my ever growing list of things to do–buy in season. Really, it makes sense, but at this moment I'm just not that organized. World’s Best Fruit Dip (Two Ingredients)
This is hands down the World's Best Fruit Dip out there. At least in my opinion. It's creamy, sweet and the absolute best match for fresh fruit. You'll see some imposters out there claiming to be amazing, but I can assure you they have NOT tried this one. It's like a little bowlful of cream cheese with just the right amount of sweetness from the marshmallow creme.

Spinach and Feta Scrambled Eggs with Tomatoes
There's a little coffee shop in the city across the river from my hometown. The shop was owned by a family friend and was definitely the hot spot in town when it opened.
