    Sweet Onion Vinaigrette

So I came across some cranberry and Turkey wraps in the grocery store the other day. They looked amazing. I'll be sharing my copycat recipe in the next couple of weeks. But the kicker for me was that these wraps are served with a Vidalia onion vinaigrette. And I knew, it would be good. So, before I even set out to make the wraps, I whipped up my own version of a Sweet Onion Vinaigrette.

  • No boring salads here! Jim n Nick's Copycat Pulled Pork Salad is just like the original. Seeing as I only ever order this salad (and extra cheese biscuit) I knew I had to recreate this at home. It's loaded with pulled pork, bacon and cheese. But it doesn't stop there add in fresh tomatoes, cucumber, toasted almonds and homemade croutons and you've got a salad that doubles as a full meal!

Ok, I know I said no more salads, well at least in my mind I did! I had all intentions of taking a break from the green stuff. And I'm pretty sure this Jim n Nick's Copycat Pulled Pork Salad might just be the best one yet.

  • Let's be honest, the best part of a salad is ____________ (fill in the blank). For me, it's the dressing, the extra cheese and of course the croutons! There's nothing quite as good as a bite of salad that ends with the crunch of a really good crouton. These Homemade Texas Toast Croutons are the perfect mix of light, crispy & totally irresistible. I'd eat these by the handful if I wasn't trying to make better choices. I bet you would too!

    Homemade Texas Toast Croutons

There are a few things, in my mind, that truly make a salad. One is the dressing, I think this is a given. It's what pulls all the ingredients together. Then there's the cheese, I can't think of the last salad (coleslaw doesn't count) I ate that didn't have cheese in it. And then you'll need to top it with a crispy crunchy crouton, just like these Homemade Texas Toast Croutons.

Ok, I've been throwing salads at you left and right, well to be fair, maybe it's more like two other salad, BUT it feels like my life has been inundated with salads lately. I blame January. Crispy Chicken Barbecue Salad

I rarely get a salad at a restaurant and I don't know why. If you've been following along, you know that I'm not the biggest fan of the green stuff, but then am I? The scarce time I do order a salad I always love it, so what really is my problem? Is it because they take extra work, all those veggies that need chopping? Is it because there's probably something else on the menu I'd rather eat? That's probably the real reason. But years ago I had a Crispy Chicken Barbecue Salad and I still think about it, it was good.

  • My three year old dissed my amazing spaghetti sauce for this Feta, Tomato & Toasted Nut Salad. Seriously, if a kid chooses salad over carbs, you know it has to be a good one. I've added bacon, cause well, bacon! And serve it with a drizzle of your favourite salad dressing and you've got an easy dish that will show up repeatedly on your dinner table.

Feta & Tomato Salad with Toasted Nuts

I like to think of this as a winter salad because of the festive colours, or maybe because we've nicknamed it Snowball Salad, but really you could serve it any time of year. This tasty Feta & Tomato Salad with Toasted Nuts is a recipe that my auntie Ele made, literally just once, and I fell in love with it. I'm not a salad lover. To be honest, I don't make it often, but with all those impending resolutions creeping up, that may have to change. Snowball Salad will be making an appearance on our meal rotation.

  • This Carrot & Cream Cheese Jellied Salad breaks the mould with its tropical flavours, a dreamy cream cheese base and carrots to cut through the sweetness! So much so, my dad and my two aunts all submitted the exact same recipe. If that doesn't elude to this recipe's greatness, I'm not sure what could.

  • Homemade caesar dressing, pan fried crispy salt and pepper breadcrumbs and mushrooms makes this version the king of all caesars. One bite, and I'm sure you'll agree, this is the only way to eat this side dish. Caesar Salad with Mushrooms and Crispy Breadcrumbs is a worthy update to the classic.

Caesar Salad with Mushrooms and Crispy Breadcrumbs

When I'm at a restaurant, I generally choose the caesar when offered a side. Of the three usual options, caesar is my go-to. It's not as filling as the soup and the side salad is, well, boring. Now, a good caesar salad in my opinion has to have fresh crunchy greens, a garlicky dressing, bacon and loads of parmesan, Caesar Salad with Mushrooms and Crispy Breadcrumbs takes my favourite salad, one step further. The addition of fresh mushrooms is incredible. I also like to top the whole thing with crispy salt and pepper breadcrumbs for extra crunch in every bite.

    Creamy Sweet Dill Coleslaw

I grew up in a family that always serves salads at any meal. I can remember my aunt making a dill dressing for a plain old lettuce salad that took the salad from totally boring to amazing. So amazing, in fact, I chose this over the fresh from the oven buns. Shocking, I know! There's something about dill in a salad that gets me every time. When I made Creamy Sweet Dill Coleslaw, it seemed like a natural addition, but holy holy, did that go over well!
