I grew up in a family that always serves salads at any meal. I can remember my aunt making a dill dressing for a plain old lettuce salad that took the salad from totally boring to amazing. So amazing, in fact, I chose this over the fresh from the oven buns. Shocking, I know! There’s something about dill in a salad that gets me every time. When I made Creamy Sweet Dill Coleslaw, it seemed like a natural addition, but holy did that go over well!

To be completely honest, this dill version was my first attempt at making coleslaw. I usually just grab a bottle of coleslaw dressing. But now, after making the dressing from scratch, I will not be back to the grocery store looking for the bottled variety, anytime soon. This is so much better. How have I not known, how good the real deal is?

Anyways, I did a little research on easy coleslaw dressing recipes and put together my own version and then grabbed the dried dill. I didn’t have fresh dill on hand, but I bet it would be even better with fresh! I will test drive this soon and let you know, but in the meantime, dried dill did the trick for me and I’m sure you will love it just as much! It’s good, like third helpings good.

It’s crazy that I’m even writing this paragraph, that’s how easy this salad is. But here we go! Toss a bag of coleslaw mix into a bowl. Let’s be honest here, I like easy and I don’t see anything wrong with making life easier by using the precut version you find in the produce section of the grocery store. But, feel free to chop your own cabbage and carrots, if that’s what you like. Chop up a few green onions while you’re at it and mix the two together.

Do you add anything else to your coleslaws? I feel like radishes would be a nice addition, but it’s the one veg, I rarely have on hand. I even think the crunch of celery would be awesome in this dish! Thoughts?

Ok, on to dressing. Whisk together the coleslaw dressing ingredients (mayo, sugar, vinegar, salt and dill). Pour the dressing into the coleslaw and stir until everything is well coated. Let this sit and marry for about 30 minutes before serving. That’s it! It couldn’t be easier.

The dill in this coleslaw is not overpowering, there’s a subtle hint of the herb that’s just the right amount and perfect for the coming season. There’s also a nice slight sweetness to it that you’ll barely taste. It really is summer in a bowl. The perfect side dish for any upcoming barbecues or as a condiment on Slow Cooker Brined Pull Pork sandwiches. Either way, you can’t go wrong with this dilled version of a classic.

Creamy Sweet Dill Coleslaw

A lightly sweet coleslaw made even better with a generous sprinkling of dill. Great as a side or on top of sandwiches and burgers.

INGREDIENTS

  • 16 oz bag of coleslaw
  • 2 green onions, tops only, chopped
  • 1/2 cup mayonnaise (I used Duke's)
  • 2 tbsp white vinegar
  • 3 tbsp sugar
  • 1 tsp dill
  • 1/4 tsp salt
  • pepper, to taste

INSTRUCTIONS

  1. Whisk together mayonnaise, vinegar, sugar, dill and salt. Mix until sugar and salt are mostly dissolved.

  2. Mix coleslaw and green onions in a bowl. Add dressing and stir until completely coated. Let sit for about 30 minutes.
