I’m always looking for a quick and easy recipe to shake things up at lunchtime. I find I get stuck in a bit of a rut, always eating the same things over and over. I had no intention of posting this recipe for Red Pepper & Spinach Lunchtime Pizza when I made it a few weeks back. It was a bit of a throw together, but after one bite, I knew I had to share. This pizza takes no time, I mean literally, it bakes while you clean up the kitchen or go through your mail.

Not only is this pizza easy, and who doesn’t love another easy recipe, but it tastes gourmet. Seriously, like you just picked it up from some fancy pizzeria. You’ll head back to work after lunch feeling like you’ve just hit the pizza jackpot. Can you tell I’m a fan? It’s so good!

With just a few ingredients this pizza goes straight to the top. I shared this with my son and I crossed my fingers he wouldn’t like it and I’d get more for myself, no such luck. He gobbled it up. I question a kid that likes spinach and roasted red peppers, but between you and me, I think it’s only because it was in pizza form that it disappeared as fast as it did, but I’ll take it.

Are you like me and make something hoping no one will like it so you can polish it off, without having to share? I learned this past weekend, my cousin has been telling her 5 year old son that pop is spicy and he’s never tried it. This is genius! “Spicy” cupcakes, here we come! I want my sons to experience everything when it comes to food, and I plan to use a three-bite rule as the kids grow, but for now, I’m happy with an extra bite or two for just me, and especially of this pizza.

How to make Red Pepper & Spinach Lunchtime Pizza

Let’s talk naan bread for a minute. Frankly, it makes the perfect pizza crust. It’s my favourite crust for any kind of pizzas these days and we eat a lot of pizza, in this house. They’re so easy and come in large or mini sizes so you can cover the whole family or let the kids make their own individual pizzas. They’re slightly chewy, a little thick and make for the perfect bite.

Then add the toppings, spinach, roasted red pepper, goat cheese, mozzarella and a sprinkle of basil. Could it be any easier? I do slice the spinach and peppers thin so I can get a bit of each in every bite. To make life easier, I buy jarred roasted red peppers, in fact, I usually get them at a dollar store. Then bake the pizza until the cheese is all melty. Finished with plenty of time to enjoy your quick gourmet lunch.

I’m not sure I can even find the right words to describe how tasty this little pizza is! It’s good. It’s quick and it’ll have you back to work satisfied and smiling to yourself, because you, my dear, ate better than your coworker. Ok, we don’t actually know what he or she ate, but for a lunch, this is a pretty stellar meal!

Red Pepper & Spinach Lunchtime Pizza

I wasn't going to share this, it was a quick throw together lunch, but after one bite, I was convinced this needed to be passed along. An uncomplicated pizza that tastes gourmet and is quick enough that you can make it on your lunch hour.

Cook Time 14 minutes
Servings 2 people

INGREDIENTS

  • 1 naan bread, large
  • 2 tbsp pizza sauce of your choice
  • 1 cup spinach, sliced fine
  • 1 whole roasted red pepper, diced
  • 1/4 cup goat cheese, crumbled
  • 3/4 cup mozzarella cheese, grated
  • 1 tsp freeze-dried basil or fresh if you have it

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F.

  2. Spread the pizza sauce over the naan bread. Top with spinach, then roasted red peppers, goat cheese, basil and mozzarella cheese.

  3. Bake for 14 minutes or until pizza is hot and cheese is melted. Serve immediately.
