Weeknight Garlic Bread Pizza
One of my favourite meals, if not my most favourite is pizza. I love pizza in any form, in any shape, in whatever way it’s served. I will find any reason to eat pizza. Whether it’s the original pie, in a grilled cheese, on top of a burger or even mixed into pasta. But one of my most loved go-to recipes for an easy meal is Weeknight Garlic Bread Pizza.
Now, I’m sure you’ve seen a variation of this easy weeknight pizza using french bread, but trust me when I tell you to skip that bland version. Grab yourself a loaf of the garlic butter slathered french bread that’s usually right next to it on the shelf. It will take your pizza to a whole new level, literally it’s the best of both worlds!
Now when I think Italian food, my mind eventually wanders to that irresistible garlic bread that always shows up alongside most Italian dishes. But I’m not talking mediocre bread, I’m talking garlic bread you could make a meal out of, like this Homemade Garlic Herb Bread. And personally, I’ve always thought the bakery in most grocery stores, do a fantastic job with garlic bread. It’s always loaded with extra butter and is the perfect vessel for pizza bread! It’s a natural marriage between garlic bread and pizza and makes for the tastiest weeknight favourite!
This meal is always a last-minute decision for me. Usually, when the chicken dish seems boring, or I forgot to defrost some sort of meat. Or I’m just craving something truly indulgent with zero effort. My husband grabs a loaf of the bakery’s garlic bread on his way home, while I whip up the toppings. It takes so little effort, it’s the perfect, quick fix when you’re exhausted but craving comfort food.
Let me take a minute and sing the praises of this garlic bread pizza. First of all the bread gets warm and just a little bit crispy, the butter seeps down into the bread and mixes with the pizza sauce giving it a rich, delicious flavour. Top it with your favourite toppings and lots of mozzarella cheese and everyone at your dinner table will think you’re a genius.
How to make Weeknight Garlic Bread Pizza
I think what I love about this meal the most is its versatility. You really can’t make a mistake with this easy recipe. In fact, it’s the perfect way to involve everyone in the dinner process. Let your kids, husband, or even guests create their own favourite version by making a buffet line so to speak of toppings.
Open the garlic bread and lay it flat so that the garlic butter is face up. If we’re each making our own pizzas, I’ll cut the garlic bread in half, so we end up with four equal-sized pieces. Spread your favourite pizza sauce, I recommend this Homemade Fennel Pizza Sauce (it’s so so good), on the top of the garlic bread and then load it up with your favourite toppings. Finish it with lots of mozzarella cheese and bake it until the cheese is melted and the bread is heated through.

Weeknight Garlic Bread Pizza
The easiest, tastiest weeknight pizza out there! Grab a loaf of bakery-style garlic bread and load it up with your favourite pizza toppings. Let the kids share their own half. A family favourite any night of the week!
INGREDIENTS
- 1 loaf fresh garlic bread (I use the one from my grocery store deli)
- 1 cup pizza sauce
- 2 cups mozzarella shredded
- toppings (your choice)
INSTRUCTIONS

Preheat oven to 350 degrees F.

Open garlic bread and spread a 1/2 cup of pizza sauce on each half. Add your favourite toppings and then one cup of mozzarella cheese on each garlic bread half.

Place pizzas on a baking sheet and bake for about 13-17 minutes or until cheese is melted and bread is heated through. Slice and serve immediately.
