    Sheet Pan Fajita Shrimp

Ugh, it's diet season and I'm on one! Are you? I know, I know, it's supposed to be a lifestyle change, but that would imply I want to do this forever and frankly, I don't. That is until I made Sheet Pan Fajita Shrimp and totally fell in love with this tasty diet-friendly dish!

  • Party Pasta (Lazy Lasagna) is an easy take on the traditional lasagna but extra easy. Made with egg noodles and a basic sauce layered with cheese and sour cream for a bit of a twist. This main dish full of lasagna flavours will have everyone coming back for seconds. It always does in our house!

    Party Pasta (Lazy Lasagna)

Winter months are for casseroles. Cheesy, hearty, pasta-filled casseroles. Sure, it's a new year so we all are trying to eat healthier but everything in moderation, right?! Besides this Party Pasta (Lazy Lasagna) hits all four food groups and doesn't that make it a well-rounded meal, I think so!

  • Need an annual birthday meal? Has someone asked you what your favourite birthday meal is and you fumble for an answer? Don't worry, I'm going to lend you mine, it's super easy, and loaded with comfort. Porcupine Balls with Mushroom Cream Sauce are beef meatballs studded with rice (hence the name), a bit of onion and loaded with spices and then baked in a mushroom cream sauce.

Porcupine Meatballs with Mushroom Cream Sauce

Porcupine Meatballs with Mushroom Cream Sauce literally my favourite birthday meal EVER! I don't actually remember what I would ask for as a kid, but as a teenager and every year since this has been my birthday meal. Except for the one time my mom was out of town and my Dad made me a steak with peppercorn sauce. There was even that one time when my brother threatened to eat all the leftovers and I may have had an adult tantrum. No lie.

  • Curry Chicken and Broccoli Stuffed shells is a delicious, easy weeknight twist on the classic casserole. Chicken and broccoli get mixed with a mild curry sauce stuffed into pasta and covered in melted cheese. This creates a dish that's homey and comforting and loved by all.

Curry Chicken and Broccoli Stuffed Shells

Curry Chicken and Broccoli Stuffed Shells is the perfect weeknight meal for your family. It's such a classic recipe. You've probably tried a version of this dish before. It was likely called Chicken Divan, or maybe Broccoli Chicken Curry Casserole or some variation of that and served over rice. With this version, however, I've upped the comfort factor and stuffed all this curry goodness right inside a pasta shell.

  • Sausage & Crispy Brussel Sprout Flatbread is a combination so good, it's crazy! I sat on my kitchen floor counting down the 14 minutes for this to bake. Crispy Brussel Sprouts get toasted to perfection, complimented by juicy sweety drop peppers (a must!), creamy goat cheese and fennel sausage. OMG, I'm drooling just thinking about it. My only dilemma is whether I should call this an appetizer or a meal.

Sausage & Crispy Brussel Sprout Flatbread

You guys! I literally sat on my floor, in front of my oven watching this Sausage & Crispy Brussel Sprout Flatbread bake. I sat there like a little kid watching cookies, or like every baker on the Great British Baking Show at one point or another. And watched and waited, checked the timer and waited some more. Really, it was only 14 minutes, but it felt like a lifetime. I could not wait to sink my teeth into this flatbread and it was so worth the wait! This is crazy good.

  • This is not your mama's meatloaf. Country Herbed Meatloaf is a traditional meatloaf with a tomato herb sauce, that truly sets it apart. Home cooked, comfort food at its finest. This easy recipe will quickly have you updating your weekly meal plans to include this new favourite.

    Country Herbed Meatloaf

Country Herbed Meatloaf is better than your mama's meatloaf. It might even be better than grandma's. It's definitely better than your best friend's mother's cousins version. This could probably even be called "catch a husband meatloaf", for it just might deliver. It's that good!

  • Roasted Vegetable Pita Sandwich will delight vegetarians and meat eaters alike. Loaded with Mediterranean marinated vegetables, a smear of hummus and finished with a sprinkle of salty feta, this pita pocket is bursting with flavour. A hearty meal that tastes like it's straight from a gourmet deli.

    Roasted Vegetable Pita Sandwiches

Roasted Vegetable Pita Sandwiches are my favourite vegetarian sandwich. I'm not vegetarian. I tried once, but bacon brought me back, true story. This sandwich though, if I had to choose only one sandwich for the rest of my life, it would be this one. It's so good. It's bright and packed with flavours. The roasted veggies are marinated overnight to pack maximum flavour and do they ever! It's one heck of a bite. Soft pita bread is loaded full of creamy hummus, Mediterranean roasted vegetables and topped off with salty feta.

  • Potacos are essentially a taco stuffed potato, with a much catchier name. A dish that comes together in minutes, using leftover taco meat and baked potatoes. Add in a few extra Mexican favourites and dinner will impress even your toughest critics. The perfect meal for a busy weeknight.

    Potacos (Taco stuffed potatoes)

Taco stuffed potatoes or Potacos, as we call them in our house, are a huge favorite with our family. I mean really, what's not to like. A warm baked potato topped with taco meat mixed with spicy tomatoes, corn and more, then smothered in cheese and finished with proper taco garnishes. It's heavenly! Ok, but if I'm really being honest, I like this best, because it's one of the easiest, throw together recipes I've made.

  • Bursting with flavour and a surprise cheese centre these low-carb chicken meatballs will quickly replace all other meatball recipes. These baked Mozzarella Stuffed Italian Chicken Meatballs are a definite must!

    Mozzarella Stuffed Italian Chicken Meatballs

Do you have a recipe, that for the life of you, you just can't conquer? We all do, right?! For me, it's meatballs. I know, you're in total disbelief, the meatball, a staple on so many tables, and yet it intimidates the heck out of me. I can never get the breadcrumb to meat ratio right. So, that's when I decided to just omit the breadcrumbs all together and did I hit the jackpot! Mozzarella stuffed Italian Chicken Meatballs are the first recipe (of many future meatball variations) that not only, did I tackle successfully, but I knocked them out of the…

  • After one bite, I knew I had to share this quick and easy, Red Pepper & Spinach Lunchtime Pizza. A vegetarian meal that comes together in the same amount of time it takes to check your mail! A naan bread crust covered with a combo of toppings that will fool your date with its gourmet flavours.

Red Pepper & Spinach Lunchtime Pizza

I'm always looking for a quick and easy recipe to shake things up at lunch time. I find I get stuck in a bit of a rut, always eating the same things over and over. I had no intention of posting this recipe for Red Pepper & Spinach Lunchtime Pizza, when I made it a few weeks back. It was a bit of a throw together, but after one bite, I knew I had to share. This pizza takes no time, I mean literally, it bakes while you clean up the kitchen or go through your mail.
