Cilantro Lime Grilled Chicken
Who’s ready for chicken, like really REALLY good chicken? With all this extra cooking at home, I seem to have an abundance of random ingredients. I think I’ve counted eight cake mixes, four containers of mayo, multiple bags of red pepper flakes (which will last forever in this house) and most recently three packages of cilantro, what is that? So, out of an overload of the flavourful green leaves, comes Cilantro Lime Grilled Chicken.
You guys! This flavour-packed chicken totally disappeared in our house. I stood at my counter, taking bite after bite of this chicken while I dished up plates for my boys. I’m positive I ate at least three portions of this protein before the night was over.
I’m sure you know how good grilled chicken on a barbecue already is. But covering this in an epic cilantro-lime marinade takes this to dish to a whole new level! Seriously yum to the power of 12. Did you catch that math reference? We are all things school in this house at the moment. Anyone else gearing up for virtual learning?
This chicken is a new favourite not only for the flavour but also for how easy it is! Perfect for a quick weeknight meal. Marinade it overnight and then slap it on the grill. And make extras!! We served ours the first night with corn on the cob, and rice. Then used the leftovers to make bowls, loaded with cilantro rice, corn, black beans and a drizzle of sour cream. It was insane!
How to make Cilantro Lime Grilled Chicken
Ready for the epitome of summer chicken? Literally summer on a plate. So fresh and addictive! Me too, let’s dig in! Firstly, just toss everything except the chicken into a food processor and pulse! Make sure everything is well pulverized and blended. Pound your chicken into an even thickness. This is a must for perfectly cooked chicken.
Then, place the chicken in a zip-top bag and pour the marinade over top. Seal it up, give it a little massage and pop it in the fridge to marinade. Marinate anywhere from 8-48 hours!
Next preheat your barbecue on high. Then, right before grilling the chicken, reduce the heat to medium. Remove the chicken from the ziptop bag and lay it on the grill. Let this cook without moving it for 8-12 minutes, flip and grill the other side until cooked through. Once cooked, remove and cover with a sheet of foil and let rest for about five minutes.
Pro-tip: Don’t flip your chicken until it releases easily. Once the chicken is perfectly seared, it’ll let go from the grill without tearing. If you start to lift it and it sticks, just leave it for a couple more minutes!
That’s it! This recipe is my new go-to chicken dish. It’s just sooo easy! I’ve served it three times in the last few weeks, it’s the perfect dish! And it keeps my cilantro obsessive shopping sprees from going bad and ending up in the trash. Give it a try, I promise this one will end up on your meal rotation!

Cilantro Lime Grilled Chicken
Cilantro Lime Grilled Chicken is the epitome of summer. Packed with fresh flavour, this chicken is a must make!
INGREDIENTS
- 4 chicken breast, boneless, skinless
- 2 limes, juice of
- 1 cup cilantro
- 1 jalapeno, seeded and roughly chopped
- 1/4 cup red onion, roughly chopped
- 1/4 cup olive oil
- 2 cloves garlic, peeled
- 1 tsp salt
- 1/2 tsp black pepper
INSTRUCTIONS

Pound the chicken into an even layer.

In a small food processor, blend all the ingredients except the chicken until completely blended.

Place chicken into a zip-top plastic bag and pour the marinade over that top. Seal the bag and massage the chicken to make sure it's well coated. Refrigerate for 8 to 48 hours.

To cook preheat barbecue on high. Reduce heat to medium and grill one side of the chicken for about 8-12 minutes, flip and grill the other side, until fully cooked.

Remove from the grill, cover with foil and let rest for five minutes.
