This is such a gimme recipe, it’s just so easy. I almost didn’t post it because it’s just that simple, BUT, it’s also ridiculously tasty, so I HAD to share. If you’ve been around here for a bit, you’ve likely heard me whine about rice, how it’s just not my favourite, blah, blah, blah. Well, damn it, I’m a convert! I’m officially jumping ship and climbing aboard the rice bandwagon. You can expect loads of fun rice recipes in the future. It’s good! What can I say, I’ve finally accepted my side dish fate.
Really why has it taken me so long to grow a fondness for rice? I mean, it’s completely versatile, hello blank canvas. It’s the perfect way to add some extra flavour to a boring weeknight staple. We’re talking flavoured rice, like French Onion Rice which is the most saved recipe on the blog. How ironic is that! The self-proclaimed grain hater’s most popular recipe is a rice dish, to be fair it IS that good! Add in old favourites like Porcupine Meatballs with Mushroom Cream sauce, and weeknight standbys like Ginger and Vegetable Fried Rice, and it becomes an obvious choice for any day of the week.
How to make Easy Weeknight Cilantro Lime Rice
This recipe is perfect for a quick elevated side dish that takes literally two minutes more than regular rice. The flavour is out of this world. It’s one of those recipes, that IF you have leftovers, you’ll likely be taking giant spoonfuls of as you try to put it away.
I LOVE using my Pampered Chef rice cooker (aff. link) for this recipe, but you can cook your rice the traditional way in a pot or whichever way is your favourite version. But for me, that little microwavable dish makes perfect rice in 10 minutes, every single time.
Finally, toss in the chopped cilantro, squeez the lime over the works, stir it a few times, sprinkle with salt and pepper and call it done! No one will think this took mere minutes. The flavours are bang on! I’ve been making this side pretty regularly. While we’ve been serving this rice with corn on the cob and this amazing Cilantro Lime Grilled Chicken, my favourite way is to save extras and use it all in a bowl. Along with black beans, a bit of pico de gallo, and a dollop of sour cream, holy YUM!
Anyways, don’t let me hold you up, that’s literally all you need to know. Hot rice (to help absorb all that Mexican flavour), a little bunch of fresh cilantro, a squeeze of lime and of course a pinch of salt and pepper, and you’re done. Easy peasy! Enjoy!

Easy Weeknight Cilantro Lime Rice might just be the easiest and tastiest rice yet!
INGREDIENTS
- 1 cup uncooked basmati rice + water for cooking
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice, about the juice of one lime
- 1/2 tbsp butter
- 1/2 tsp salt + more to taste
- pepper to taste
INSTRUCTIONS

Cook rice according to package directions.

Once cooked, stir in remaining ingredients.

Serve immediately.
