When I suggested this to my husband his eyes lit up. I mean lemon pepper bacon, was the one ingredient on Noah Sim’s (a Masterchef Season 10 contestant) legendary burger. The one that Joe Bastianich couldn’t get enough. So, obviously I would spend the next year thinking about that bacon before I finally gave Lemon Pepper Bacon and a BLT a try.

I still remember that episode. Before the three judges even bit into the burger, you crossed your fingers for Noah. It was easy to see he’d be a fun contestant and no one had ever won the judges over with a burger. When Joe went in for an extra piece of bacon. What do I use it on? Um everything! I feel like the grandma on the Frank’s red hot commercial “I put that sh*t on everything!” Burgers, sandwiches (like a BLT, of course), with breakfast, crumbled into caesar salad, all by itself. Seriously it is NEVER a bad idea! Try it right now!

How to make Lemon Pepper Bacon and a BLT

Start by pulling the bacon apart and dropping it into a ziptop bag. Add the juice of two lemons and let this sit for about three hours. Drain and spread the bacon on an oven-safe wire rack and roast for about 30 minutes.

Pull the bacon out and brush with about half the juice from the third lemon. Sprinkle with freshly ground pepper and the lemon zest. Roast for an additional 10-15 minutes until the bacon is crispy. Remove from the oven and gently brush with the remaining lemon juice. I usually sort of dab the juice on at the end so that it doesn’t brush the pepper and zest off the bacon. Then go ahead and serve it.

To make the BLT sandwich, spread mayo on both slices of toasted sourdough bread. Layer the lettuce and tomato, sprinkle the tomatoes with a pinch of salt and ground black pepper, then add on the bacon and finish with another slice of toasted bread. Cut in half and enjoy!

This sandwich is delicious, but it’s the bacon that truly makes it. And I can’t wait for you to try it. Now, to be fair, I have no idea how Mr. Sim’s makes his version, but I do have to give him credit for this dish. Because without his famous burger, I would never have even thought to marry this all together. After one taste, I’m sure you’ll agree, we’re all very thankful for that episode of Masterchef!

Lemon Pepper flavoured bacon with a BLT sandwich that will blow your mind. This bacon is a must!

Servings 10 slices and 2 sandwiches

INGREDIENTS

Lemon Pepper Bacon

  • 10 slices thick-cut bacon (about a lb.)
  • 3 lemons, juiced
  • zest of one lemon
  • 1 tsp freshly ground, black pepper

BLT Sandwich

  • 4 slices sourdough bread, toasted
  • 4 slices ice berg lettuce
  • 1 large tomato, sliced
  • 1-2 tbsp mayonnaise
  • salt and pepper, to taste

INSTRUCTIONS

Lemon Pepper Bacon

  1. Seperate the bacon and put it in a ziptop bag. Squeeze in the juice of two lemons into the bag and press out any excess air. Let the bacon marinate for three hours.

  2. Preheat the oven to 400 degrees F.

  3. Remove the bacon from the bag and place on an oven-safe wire rack fitted inside a rimmed baking sheet and roast for 30 minutes.

  4. Remove the pan and brush the bacon generously with 1/2 the remaining lemon juice, sprinkle on the lemon zest and black pepper. Continue roasting for an additional 10-15 minutes until bacon is crispy. Remove from the oven and gently brush with remaining lemon juice. Serve.

BLT Sandwich

  1. Spread your desired amount of mayonnaise on one side of each slice of toasted sourdough bread.

  2. Top the bottom bread slices with lettuce, tomato slices, a sprinkle of sea salt, and black pepper and then 5 slices of bacon per sandwich and cover with top slice.

  3. Slice in half and serve.
