Spinach and Feta Scrambled Eggs with Tomatoes
There’s a little coffee shop in the city across the river from my hometown. The shop was owned by a family friend and was definitely the hot spot in town when it opened. We’d hang out there after school drinking their version of a frappucino. And on Saturdays, we’d head over the border to get Spinach and Feta Scrambled Eggs with Tomatoes. It was the best way to start the weekend.
I’m now miles away from that little coffee shop, but I make these eggs fairly often. They’re always tasty and pretty darn healthy too. Protein from the egg, veggies in the form of spinach, onions and tomatoes. Sure there’s the salty, tangy feta, but let’s just call that extra protein, calcium? Who cares, it’s ridiculously good and I say a little bit of extra cheese is ALWAYS welcome.
So, I have a bit of a confession, every time I go on a diet these eggs are the first breakfast I’ll make. I say diet, because a lifestyle change, hasn’t apparently stuck, yet. I don’t know why but after eating this dish I’m positive all my bad habits are magically erased. Don’t ask, I don’t really get it either. But since it’s the new year, which for me means a newly motivated self, I’m trying really hard to find healthy recipes that I love and this one always hits that mark!
How to Make Spinach and Feta Scrambled Eggs with Tomatoes
This one is super easy. Trust me if it was a complicated breakfast, I wouldn’t be making it. No one has time for that! I use one pan for everything. I start by sauteing the onions in a bit of butter for a few minutes. Cook until they’re almost translucent, then I stir in the spinach and let it cook down until it’s wilted.
Now, you have two options with the eggs, you can scoop out the spinach mixture and put it on your plate and then place the eggs on top of that, like the photos. Or just push the spinach and onions to the side and then melt a bit more butter, crack in the eggs and scramble theses right in the pan. You can even mix the spinach into the cooked eggs if you want.
Put the eggs and spinach mixture on your plate and top it all with thinly sliced tomatoes and then sprinkle on the feta cheese. Don’t skip the feta, it adds the perfect amount of salt and really balances out the whole dish. Then all that’s left is to sit and enjoy.

Spinach and Feta Scrambled Eggs with Tomatoes
This is always my go-to recipe when I decide to get healthy. ALWAYS. It's filling, tasty and super easy! Scrambled eggs with sauteed spinach and salty feta with bright fresh tomatoes to balance every single bite.
INGREDIENTS
- 1 cup fresh spinach, roughly chopped
- 2 eggs
- 2 tbsp onions, minced
- 1 tbsp butter, divided
- 1/2 tomato, sliced thin
- 1 tbsp feta cheese, crumbled
- salt and pepper, as desired
INSTRUCTIONS

In a medium frying pan, melt half a tablespoon of butter over medium heat and saute the onions for about five minutes, add in the spinach and saute that until wilted another three minutes. Spoon that onto your serving plate.

Add the remaining butter to the frying pan and scramble the eggs to your liking. Top the spinach with the eggs and then sprinkle on the feta cheese and finish with fresh sliced tomatoes.

Serve immediately.
