Has anyone else been feeling a little lost with the state of the world right now? We've been very fortunate and really have zero reasons to complain, but I find myself in a total funk and I just can't shake it. I haven't had any desire to cook or blog and I've put on way too many pandemic pounds! BUT this past weekend was great and it started with Tater Tot and Bacon Breakfast Quesadillas. Nothing special happened but it just felt like we turned a corner!

Craveable. Delicious. Sweet. Savoury. Snack-sized. These Peach Jalapeño Popper Pinwheels are all of those statements. My favourite, though, isn't listed and that's that they are so so easy. These little appetizers pack tons of flavour in one super-simple package. A must for your next small gathering (COVID be damned) but that's ok, a handful of people could happily demolish this treat in just a few minutes.

Lemon Pepper Bacon and a BLT
When I suggested this to my husband his eyes lit up. I mean lemon pepper bacon, was the one ingredient on Noah Sim's (a Masterchef Season 10 contestant) legendary burger that Joe Bastianich couldn't get enough. So, obviously I would spend the next year thinking about that bacon before I finally gave Lemon Pepper Bacon and a BLT a try.

Bacon Cheddar Canoe Dip
I wasn't going to share this dip. I have my favourite hot dip already on here. Hot Cheesy Spinach Dip is truly my go-to dip, but then I started craving bacon and warm gooey cream cheese loaded with dill and garlic and extra melty cheddar with bread to dip. I think this time of year always makes me want hot snacks and this Bacon Cheddar Canoe Dip is perfect for that. And besides who couldn't use another craveable dip in their repertoire?

Ok, I know I said no more salads, well at least in my mind I did! I had all intentions of taking a break from the green stuff. I've been making salads left and right and it feels like every new salad creation is just a little better than the last one. Crispy Chicken Barbecue Salad
I rarely get a salad at a restaurant and I don't know why. If you've been following along, you know that I'm not the biggest fan of the green stuff, but then am I? The scarce time I do order a salad I always love it, so what really is my problem? Is it because they take extra work, all those veggies that need chopping? Is it because there's probably something else on the menu I'd rather eat? That's probably the real reason. But years ago I had a Crispy Chicken Barbecue Salad and I still think about it, it was good.

These Bacon Wrapped Stuffed Olives were my backup plan. I was sure the original recipe I had in my mind for today's post was going to be good, so I didn't bother really planning ahead. I was so sure in fact, that I created said recipe yesterday and then panicked when it didn't turn out the way I expected. It was good, but when I popped one of these olives into my mouth, I knew this one was the winner.

To be honest, I don't make it often, but with all those impending resolutions creeping up, that may have to change. Snowball Salad will be making an appearance on our meal rotation.
