Potacos (Taco stuffed potatoes)
Taco stuffed potatoes or Potacos, as we call them in our house, are a huge favorite with our family. I mean really, what's not to like. A warm baked potato topped with taco meat mixed with spicy tomatoes, corn and more, then smothered in cheese and finished with proper taco garnishes. It's heavenly! Ok, but if I'm really being honest, I like this best, because it's one of the easiest, throw together recipes I've made.

The Best Chunky Guacamole
When I was younger, I avoided anything with avocados. I convinced myself there was zero chance I’d enjoy the green mush and that was that. I drew a line in the sand. Me on one side, avocados on the other. That was until my Aunt Linda, brought The Best Chunky Guacamole to some gathering. The gathering part doesn't matter. What matters is I tried it and my hatred for the little green gem vanished, along with that dip!

French Onion Rice
I can honestly say, I've never truly been a fan of rice. It's just never been my thing. I truly believe it's from overuse, you see, my mom loved rice, or maybe it was my Dad and she was cooking it for him. But, after years of rice at least once a week, I'm over it. That was until, I added a package of onion soup mix to my rice. And like that French Onion Rice was born and I'm a huge fan.

Homemade Greek Seasoning & Mediterranean Roasted Vegetables
I am a huge fan of greek food. I want it all, souvlaki, pita bread, lemon potatoes, dolmades, and feta cheese. Oh and spanakopita, I could live on that flaky cheese pie, alone. Don't even get me started on the desserts. Let's just say, it's one of the most flavour-packed types of cuisine out there. Years ago, I bought a greek dressing mix from Epicure and I used it on everything. Then I ran out, had to come up with my own Homemade Greek Seasoning and I'd put my seasoning up against Epicure's any day!

Creamy Sweet Dill Coleslaw
I grew up in a family that always serves salads at any meal. I can remember my aunt making a dill dressing for a plain old lettuce salad that took the salad from totally boring to amazing. So amazing, in fact, I chose this over the fresh from the oven buns. Shocking, I know! There's something about dill in a salad that gets me every time. Taco Pizza on Naan Bread
When I was little, my Dad would make taco pizza. It was sort of his thing. He didn't do a lot of the cooking, that was more my Mom's domain. He loves to cook now and will experiment and take on any, and every dish, but back in the day, he handled the barbecue, fresh fish and taco pizza. Probably other things too, that I've since forgotten, but this pizza, however, was his jam and my inspiration for Taco Pizza on Naan Bread.
