This is my new favourite. A last-minute, throw-together fruit salad. It’s easy, delicious and you probably have everything already on hand. I don’t tend to pay a ton of attention to what’s in season. I’ll add that to my ever-growing list of things to do–buy in season. Really, it makes sense, but at this moment I’m just not that organized.

A couple of Christmasses ago, my mom and I were planning the holiday brunch. We decided on these Ham and Swiss Pinwheels, an egg and potato breakfast casserole and a fruit salad. Instead of using fresh fruit, my mom suggested using some frozen bags of mixed fruit. She too has a stockpile. I was hesitant at first but figured why not. We could add a dressing and it could work.

Well, work it did. It was way better than I thought it would be. The fruit held its taste and texture and it soaked up the ginger lime dressing nicely. We added fresh navel oranges because we had them on hand. They were, along with a squeeze of lime, the only fresh addition, though.

How to make Any Season Fruit Salad with Ginger Lime Dressing

Thaw your fruit for a couple of hours before you get started, my husband got a few bites that were still a little chilly, whoops! I even ended up with little bowl of leftovers, I’ve put claim to those for tomorrow’s breakfast. The leftovers are insane!

While the fruit is thawing, whisk together the orange juice, honey, lime and ginger, set that aside. Peel and cut the oranges into bite-sized chunks. Once the fruit has thawed toss everything together and stir to mix. Let sit for an hour and serve. We recommend serving this alongside these sweet Land of Nod Cinnamon Buns or this savoury Camper’s Hearty Breakfast Scramble.

I love this recipe, it’s just so easy. A bag of frozen fruit, a navel orange or two and a dressing made with orange juice, honey, lime and a dash of dried ginger. I let my salad sit for about 30 minutes to marry all the flavours. The next day leftovers are even better!

Any Season Fruit Salad with a Ginger Lime Dressing

The easiest any season fruit salad. Good any time of year and the ginger lime dressing takes it to the next level.

INGREDIENTS

  • 16 oz. frozen mix fruit, thawed
  • 1 navel orange, peeled and cut into segments

Ginger Lime Dressing

  • 1/4 cup orange juice
  • 1 tbsp honey
  • 1 lime, juiced
  • 1/4 tsp ginger, dried

INSTRUCTIONS

  1. Thaw frozen fruit and stir in orange segments. Set aside.

  2. Whisk together orange juice, honey, ginger and lime juice. Pour over top of fruit salad. Mix together. Let sit for 30 minutes.

  3. Store leftovers in an airtight container in the refrigerator.
