Heart-Shaped Brown Sugar Palmiers (two ingredients)

Just in time for Valentine’s Day, these Heart-Shaped Brown Sugar Palmiers are the perfect cookie to share with your loved ones. They’re crunchy and crispy and caramel-y. A tasty treat using only two ingredients. And so easy to make your kids can do this one. My son has been calling them snail cookies, which I think is adorable and totally appropriate. Seriously, so cute!

After the first bite, I was pretty sure I wouldn’t like these cold. There’s just something special about that extra crispy bite, fresh out of the oven. Puff pastry sort of softens the longer it sits, in my opinion. But in this case, I’m actually in love with the day-old version of these cookies. The sugar gets a bit harder and adds the crunch, but the softer puff pastry keeps me coming back again and again.

HOW TO MAKE Heart-Shaped Brown Sugar Palmiers

INGREDIENTS

  • 1 sheet of puff pastry
  • 1/2 cup brown sugar

INSTRUCTIONS

  1. To start, set the frozen puff pastry out for at least 30 minutes to soften up. You don’t want it warm, but you don’t want it so cold it cracks either. Between 30 and 40 minutes is ideal.
  2. Spread out a quarter cup of brown sugar on your workspace, approximately the shape of your pastry. Lay the pastry on top of the sugar and then spread the remaining sugar over the top.
  3. Then, using a rolling pin, press the sugar into the dough a bit more and roll the pastry out making sure there are no cracks.
  4. Start on the short side of the pastry and roll it up as tightly as you can until you reach the centre. Rotate the dough 180 degrees and roll up the other side as tightly as you can. Gently squeeze the dough together. And place in the freezer for thirty minutes.
  5. Preheat oven to 400 degrees F.
  6. Cut the dough into 1/2 inch thick slices. To achieve the heart shape, pinch the piece of dough that attaches the two rolls into a point, so that you have a heart shape. Place on a parchment-lined cookie sheet about 2 inches apart.
  7. Bake for 18-23 minutes or until golden brown and store in an airtight container.
