Homemade Ritz Thin Mints (Two Ingredients)

Whoops, I may have inadvertently scooped the Girl Scouts cookie sales, with these two-ingredient Homemade Ritz Thin Mints. A sleeve of crackers and some Andes mints is all you need for this better-than-the-original sweet treat! Don't stop supporting the Girl scouts though, just get the Samoas!

I hate to do this, but I just stumbled upon this recipe for the easiest Homemade Ritz Thin Mints and you guys, they’re better than the original. I know, how dare I, those little mint disks are sacred, but with this recipe, I can indulge in the sweet treat as often as I want. And I don’t have to wait to run into the troop at the grocery store.

These are so easy, you can have a batch whipped up in no time! Literally, it’s just dipping the Ritz crackers that takes any bit of time at all. Well, and waiting for the chocolate to set up. This part can seem like a lifetime because, if you’re anything like me, you’ll try the first one as soon as the chocolate loses its shine. And then having to wait for the rest to set, will seem to take forever!

HOW TO MAKE HOmemade Ritz Thin Mints

INGREDIENTS

  • 40 Ritz crackers
  • 9.5 oz package of Andes Mints

INSTRUCTIONS

  1. In a microwave-safe bowl, heat the unwrapped Andes mints in 15-second intervals, stirring between each. Continue heating and stirring until fully melted.
  2. Dip a Ritz cracker into the chocolate and flip to coat both sides. Lift it out on a fork, gently tap the edge of the bowl to shake off the excess chocolate.
  3. Lay the chocolate-dipped cracker on wax paper and let it sit until the chocolate is set.
  4. Store in the freezer.

I do feel a little guilty sharing this super easy recipe. The salty Ritz cracker dipped in the mint chocolate, makes this sweet/salty combo pretty much irresistible. You’ll be making these on repeat! With this recipe, you won’t have to buy the more expensive version, but don’t stop supporting the Girl Scouts, just switch to the Samoas!
